Wonderstate’s Organic Mexican Grapos Reserva comes to us from the Grapos Cooperative in Chiapas, Mexico. This is the first year that Wonderstand has worked with the Grapos Cooperative, and the partnership is already bearing exciting fruit. This lot is a combination of coffees from four farmers within the tiny cooperative, all operating at 1400-1600 masl and farming less than 6 acres. In the cup, the roast offers notes of cocoa nibs, meyer lemon, and nougat. The result is a thick body that provides a rich sweetness and a delicious aftertaste. Wonderstate describes this roast as “dense and fudgy”, and we agree. Delicious in a variety of brew methods.
